Healthy pumpkin muffins

Today we’re making healthy pumpkin muffins. Fall is in full swing, so we’re getting back to baking on this Sunday baking day. Today we’re baking with pumpkin! This fall vegetable has a wonderfully rich flavor, making it perfect for baking. These healthy pumpkin muffins are very easy to make, super moist, and absolutely delicious. I’m sure they’ll be a hit with young and old alike. There’s no added sugar or butter in the batter besides the agave syrup, but I sprinkle a veeeery small amount of granulated sugar on top before they go into the oven, so you get a really tasty caramelized layer on top of your muffins. Roasting Vegetables

What you need:

100 grams of pumpkin puree 
2 eggs
1 tbsp honey
200 grams of oat flour
50 ml milk
1 tbsp baking powder
1 tbsp cinnamon or pumpkin spice
1 tsp vanilla extract
sea salt
optional: a pinch of brown sugar
+/- 6 pieces

What to do:

Preheat the oven to 180 degrees and place the muffin liners in a muffin pan.

Sift the oat flour and combine it with the cinnamon, baking powder, and a pinch of salt in a bowl, then mix well. Next, add the milk, eggs, pumpkin puree, vanilla extract, and agave syrup, and mix everything together. Is the batter still too thick? If so, add a little more milk!

Divide the batter among the muffin cups and tap the bottom of the pan lightly on the counter to remove any air bubbles.

Sprinkle a tiny bit of dark brown sugar over each muffin and bake for 15 minutes. Let the muffins cool slightly before removing them from the pan.
