Orzo with kale sauce

This orzo with kale sauce is a delicious vegetarian pasta dish. Kale is usually used in stews, but did you know you can do so much more with it? I’m a huge fan of kale myself. This versatile vegetable is one of the healthiest out there! Kale is packed with vitamins. A versatile vegetable

I’m willing to bet that many readers have only ever used kale in stamppot. And that’s perfectly fine. Until a few years ago, that was the only dish I made with it, too. Fortunately, there’s so much more you can do with kale. It’s delicious in salads, roasted (it gets crispy!), and even in sauces. In this orzo dish, kale takes center stage in the sauce. All you have to do is blend it briefly with some seasonings, and you’ll have a delicious (and super nutritious) kale sauce. Delicious with lemon, Parmesan cheese, and bimi! What you need:

200 gr orzo
200 gr bimi
250 gr kale
150 grams of Parmesan cheese
1 lemon
100 cooking cream
1 shallot
1 clove of garlic
1 tbsp green pesto
chili flakes to taste
salt and pepper
olive oil

What to do:

Bring a pot of water to a boil and cook the orzo according to the package directions. Reserve half a cup of the cooking liquid when draining!

Grate the lemon zest. Place the lemon zest in a blender along with the juice of 1/2 lemon, the kale, shallot, garlic, milk or cooking cream, and a generous pinch of salt and pepper. Blend until smooth.

Pour the sauce into a greased pan and heat it. Then add 100 grams of Parmesan cheese, pesto, the juice from the other half of the lemon, and some chili flakes. Stir well. Next, add the orzo along with the cooking liquid and a pinch of pepper. Let it simmer gently.

Meanwhile, heat some oil in a skillet and stir-fry the bimi with a pinch of salt and pepper until crispy, about a few minutes.

Serve the orzo with the bimi and the remaining Parmesan cheese. Garnish with extra chili flakes.
